It’s a cold sunny day here in the Antigua, Guatemala. Just came back from Monterrico, a black sand beach yesterday and I am all ready for the upcoming week. I am going to cook so much more food now that I have a fully equipped kitchen. I am proud to say that my spanish is getting better after spending 6 weeks in Central America. More updates soon!
A simple pasta dish with a little twist.. Hope you guys love it!
Ingredients
Sausages (any kind)
Spaghetti
Italian parsley
2 cloves of garlic
1 Onion
1 Dried chili
Handful of basil
5 medium size tomatoes
1 can of tomato puree
Salt and freshly ground black pepper
Instructions
Cook the pasta in salted boiling water with a bit of oil
Dice the tomatoes, onions and garlic
Remove the meat from the sausage and roll them into meatballs
Panfry the meatball with olive oil till golden brown (check they’re cooked by opening one up – there should be no sign of pink)
Fry the onion in the same pan for 7 minutes till golden brown
Add garlic and basil
Once they are cooked, add dice tomatoes and puree
Once cooked, add pasta to pan
Season with salt and pepper
Garnish with basil and pepper
Tips
You could also garnish with parsley or parmesan cheese
If the sauce is too thick, you can add water to loosen the sauce
Add salt to boiling water adds favor and it also helps reduce the gelation of the starch in the pasta.
